The vineyards are situated in the mediterranean back country at higher elevations, on clay & limestone soils of different geologic eras. The rather cool climate allows grapes to be picked when their ripeness is good, maintaining higher acid levels and low pH. This allows low SO2 levels to preserve microbiologically stable wines.
